Perfectly Abstract Roasted Pumpkin Seeds


Now that you've picked, carved, pulpled, and presented your pumpkin for the year, what to do with the seeds?

How delicious are those tender, yet crisp green seeds inside the shell know as pepitas, but how do we make the seed as a whole tastier?

The seeds of a pumpkin are rich in protein, iron, omegas, and are substantial fiber which is great for digestion.

Now let's make them tasty!


INGREDIENTS:

  • 1 cup Pumpkin seeds - (soaked in water to separate from pulp. Drain seeds, pat dry, and lay out evenly to dry out)

  • 1 tbsp Olive oil

  • 1/2 tbsp Abstract Spice

  • 1 tsp Nutritional Yeast

PREP:

  1. Preheat oven to 325 degrees.

  2. Toss all ingredients in a bowl.

  3. Lay seasoned seeds evenly flat on a lined pan.

  4. Place in oven and roast for approximately 15-20 minutes, and enjoy!
