RECIPE POST: Perfectly Grilled 'Juicy' Chicken Breast


Usually when one thinks of healthy eating, salad tends to come to mind. I would have to also say that the trusty chicken breast would be commonly be included in the lineup. However, the perfect cooking of that chicken breast tends to intimidate. And the number one fear, hands down, is making it too dry! In all honesty, this was a concern of mine for a long time. That is until I found a sure-fire way for juicy delicious chicken breasts...EVERY TIME!

Responsibly raised, antibiotic free organic chickens are a great source of lean protein. Versatility in preparation and the perfect addition to any dish is the reason why I was so adamant on finding the best way to prepare this fowl.


How can grilled chicken breasts be used you ask?

  • tossed in a salad

  • sandwich with lettuce and tomato on toasted bread

  • collab with kale salad and wrap up in a tortilla

  • season with cumin and chili powder for chicken tacos/nachos

  • add to a lettuce leaf and top with a sauce of: soy sauce + sweet chili sauce + sriracha

  • slice in strips and tag team with your favorite sauce

  • toss in a soup

  • top a potato (sweet potato even!)

  • add mayo, dijon, celery, onion, and apple for chicken salad

  • add to your favorite pasta dish

  • top on a homemade pizza

I will say less and drop the process right...about...NOW!



WHAT YOU NEED:

  • Organic, antibiotic-free, boneless, skinless, chicken breasts

  • 2 cups buttermilk

  • 1/4 cup apple cider vinegar

  • 2 tbsp Abstract Spice

  • Olive Oil


THE PROCESS:

  1. Grab 4 boneless chicken breasts (skinless is optional)

  2. Marinate in 2 cups plant milk of your choice (regular milk will work as well) + 1/4 cup apple cider vinegar + 2 tbsp Abstract Spice

  3. Marinate for at least 2 hours

  4. Take marinated breasts and drizzle with a little olive oil. 'Butterfly' chicken breast by laying the breast flat on the cutting board surface and slicing midway through the breast with the knife parallel to the cutting board. Slice 3/4 of the way through to 'butterfly' or all the way through making 2 thin chicken cutlets.

  5. Heat your indoor grill to medium/high, oiling the cooking surface. Lay marinated chicken breasts flat on grill surface and cook for 2 minutes. Flip and repeat on the other side.

  6. Remove from grill and let set for 5 minutes before digging in!

  7. ENJOY!
