RECIPE: Broccoli 'Cheese' Soup

Soup is absolutely a year-round meal. Although usually favored more during the colder months, soup is making its way as a quick and easy, satisfying meal for all of the seasons. Delicious ingredients and an amazing broth is 'how' you soup!

Now when it comes to a broccoli cheese soup, it's no secret the main ingredient is CHEESE! But what if I told you I have a recipe that will give the same comfort-food-body-hugging love without this main ingredient? Well believe me when I say it is possible, and my Test Kitchen Thursday proved it...LIVE! Plus this recipe is loaded with essential vitamins, minerals, and fiber aiding in lowering blood pressure and cholesterol as well as improving skin and hair!

Trust, I surprised myself! This recipe is SUPER delicious fresh and yummy without the discomfort of tummy rumble issues due to dairy. Check the ingredients below, it's dairy-free! Soups on!


INGREDIENTS:

  • 4 cups fresh broccoli florets (approximately 2 full stalks)

  • 1/2 medium onion, diced

  • 3 cloves garlic, minced

  • 1/2 tsp celery seed

  • 1/8 tsp nutmeg

  • 3/4 cup flour

  • 1/2 stick plant butter

  • Abstract Rose Sea Salt

  • 1/4 cup nutritional yeast

  • 1 tsp lime juice

  • 4 cups Abstract Spice broth (4 cups water + 4 tbsp Abstract Spice)

  • 2 cups almond milk


THE PROCEDURE:

  1. Make the rue: in a large soup pot turn heat to medium,

    1. melt butter and whisk in flour until rue turns brown and crumbly

    2. season with a few shakes of Abstract Rose Sea Salt

  2. Add to rue onions, garlic, and celery seed.

  3. Gradually whisk in broth, turning soup into a thick liquid.

  4. Whisk in almond milk until well incorporated.

  5. Add in nutmeg, nutritional yeast, and lime juice until well blended.

  6. Add in fresh broccoli, turning heat to low, and cover pot letting broccoli simmer for 30 minutes.

  7. ENJOY!
