RECIPE: Simple Spinach Bruschetta


Oh the things a sister can do with a tomato! This is one of my absolute favorite tomato recipes hands down! Matter of a fact, I've been preparing the base of this recipe for the past 20 years at least- I just thought to add the healthy punch of spinach recently. And an amazing addition it is!

This recipe is perfect enough for a light warmer weather dinner main- accompanied with a toasted baguette of course, or as a topping for roasted veggies, lean meats/seafood, flatbread/pizza, pasta, baked potatoes, and heartier dishes adding brightness and amping up the profile of flavor.

And on top of that it's super simple to make!

INGREDIENTS:

  • 2 cups diced tomatoes, canned will do

  • 2 cups fresh spinach, chopped

  • 3 cloves garlic, minced

  • handful of fresh basil, chopped

  • 1/4 cup extra virgin olive oil

  • 1/2 teaspoon Abstract Rose Sea Salt (more/less to taste)

  • serve with: french baguette, sliced and toasted


THE PROCESS:

  1. Combine all of the above and mix until well incorporated. Enjoy with toasted baguette slices.
