Quick Smoked salmon & eggs wrap w/ cream cheese….

I had the idea to do this before I went in to work, but ran out of time this morning and had to improvise ;-).  So I grabbed a plastic container and lid- cracked two eggs and scrambled them before putting the lid on top, aluminum foiled about 2 tablespoons of cream cheese and about 2- 3 ounces of smoked salmon.   Reached for my Trader Joe’s wheat tortillas (the absolute best tasting tortillas!) and was out the door!   After settling in at work I made it happen.  Literally within 5 minutes, in my office break room breakfast was done- and done goooooooood!

Here’s what I had:

-1 wheat tortilla (prefferably Trader Joe’s)

-2 tablespoons cream cheese

-2 large eggs

-2-3 ounces smoked salmon

-microwave safe bowl/dish (with lid if traveling)

Here’s what I did:

– Took the lid off the raw scrambled eggs and placed in the microwave for 30 seconds on high (eggs should be almost cooked but still a little raw in the center)

– Mixed in the 2 tablespoons of cream cheese & 2-3 ounces of salmon.  Mixing all together to evenly distribute.

– Put the mixture back in the microwave for 30 more seconds, stuffed mixture in the wheat tortilla wrapped it up and breakfast was served!

Now if I had been at home I would have most likely added scallions (green onions), and some dill.   I encourage you to try this over the weekend- or better yet, next week when you’re back at work!
