This basic, yet delicious, combo of roasted veggies works well as a side, great as a main dish, and even better as an add-in for casseroles. The best part is you can add or take away different veggies based on your taste! Simple AND tasty!!
Here’s What You Need: *Preheat oven to 500
2 each- cleaned, sliced short-side (circles) zucchini and yellow squash about 1/8 inch thick
1 red bell pepper cleaned and cut into strips
1/2 onion sliced
1 shallot sliced
1 clove garlic minced
2 tbsps oil
Abstract Rose Sea Salt to taste (~1 tbsp)
Here’s What You Do:
Coat pan with cooking spray.
Combine all ingredients in a bowl and toss with approximately 1 tbsp of Abstract Rose Sea Salt until evenly coated.
Lay out evenly on oiled pan.
Roast for approximately 15 minutes or until browned and toasty.
