Once again I'm grabbing that handy bag of fresh pre-packaged shredded veggies! One of my favorite stores, Aldi's, has a convenient and delicious pre-packaged shredded kale salad that can be found in their refrigerated produce section. If you can't find this exact salad package, any shredded pre-packaged vegetables will work, such as cabbage slaw, broccoli slaw, etc.
*CulinaryHealthTIP: Tender leaves such as spinach and arugula are not good subs being that their textures won't hold up well under the high roasted temperature. Kale, Swiss Chard, and Collards are a more preferred sub.
