This recipe was inspired by the delicious Beluga Lentil & Mushroom Soup I devoured that I picked up from a local farmer's market. While the market's version was scrumptious, this one I created is a bit more harty and instead of the mushrooms mixed in the lentil soup itself, I sauteed them to a crisp and loaded them on top of my filling version of the soup. Spiced Golden Turmeric Green Tea
8oz. hot green tea (steeped 5 minutes)
2 tsps ground turmeric
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2-4 ounces plant based milk
1 tbsp honey, to taste
The Process:
1. In a large mug, add spices and mix in honey until a paste is formed.
2. Add steeped green tea.
3. Stir in plant based milk and enjoy!
Tis' the season for falling leaves, cooler temps, and warmer foods of comfort- namely soup!
And to make it that much better (as if it could get any better!), I made it vegan!
Perfectly Abstract Spice seasoned white bean soup, sweet grilled onions, finished with delicious vegan Italian sausage with a kick of spice!
Hey, but don't take my word for it, try this easy comfort-food recipe for yourself!
Soup:
2 cups or 2- 16oz. cans(rinsed) of prepared Great Northern beans
1 tbsp Olive Oil
2 tbsp Abstract Spice (Original, Lower Sodium, or Spicy)
2.5 cups Water
Sausage Saute':
2 tbsp Olive Oil
2 cups Vegan Italian Sausage, sliced
1/2 Onion, sliced
1 tbsp Abstract Spice
The Process:
In a pot, add and mix together all soup ingredients on med/high heat until boiling. Once boiling, cover and lower temp to simmer (low/med) for 20 minutes.

In a skillet/pan, heat 1 tbsp oil and add onions on med/high heat. Saute onions until browned and translucent- remove from pan.
Add 1 tbsp of oil to the same pan tossing in sausage and 1 tbsp Abstract Spice sauteeing on med/high heat until browned and crisp.

In a bowl, layer soup, onions, top with sausage, and enjoy!
Pairs well with a crusty piece of french bread and a glass of white wine!

Now, about the vision. This New Year has presented itself with an anticipation that is igniting many of us to literally live our best live! The obvious common core of healthful eating is being sure to incorporate fruits and veggies each time you eat. Now, how these fruits and veggies are prepared and what accompanies them is where things start getting a bit foggy, lol! No fear, AC here to help you battle just that.
- Be sure majority(if not all) fruit/veggies are mostly raw and/or lightly cooked.
- Now, this doesn't mean you can't have Big Momma's slow cooked greens on Sunday, however, try dicing some fresh onion and peppers and topping your serving of greens with it! Super fresh and delicious taking nothing away from those tender greens! Yeah, chow-chow!! This is just the non-pickled version.
- Spinach is not just for salads, lunch, or dinner- it makes breakfast vibrant as well!
- Grab a handful and top it with fresh scrambled or fried eggs (top with diced avocado and a sprinkle of sea salt for added benefits and good fats!)
- Omelettes LOVE fresh spinach and veggies. Work the spinach in the eggs for the outside, and dice fresh veggies with a squeeze of lemon and Abstract Spice for the inside.
- Tacos for lunch? Watch your leaves!
- Most of the time when adding 'green' to your tacos it's usually of the iceberg stem. Switch it up a bit and swap it out for spinach, romaine, chopped collards or kale. Not only are you adding vitamins and nutrients, but you're also kicking up the flavor profile immensely!
- Fruit in salad is not just for the cocktail!
- When you think of a fruit salad, that tiny plastic bowl of uniform chopped fruit in juice, also known as the good ol' fruit cocktail, tends to come to mind. Instead, take fresh thinly sliced apples, pears, grapes, chop up some strawberries, or whole blueberries and add one of these or all to a basic fresh and crisp savory salad for a cool/crunchy and sweet/savory flavor profile that jazzes up any ordinary salad by far.

- Spinach is so versatile and adds a neutral to subtle 'sweet' component when partnered with not-so subtle sweets such as fruit or even peanut butter!
- Add a few handfuls of fresh spinach to 2 cups almond milk, 2 tbsps natural peanut butter, 1 tbsp natural sweetener(honey/agave), 1 tbsp cocoa powder, 1 cup ice, and blend until smooth for a SUPER delicious chocolate peanut butter dairy-free shake! The ONLY giveaway that spinach hides inside is because your glass will be green!

NON-DAIRY FRESH AUTUMN HERB BUTTER
- 2 cups non-dairy butter, softened (earth balance)
- 1 tbsp thyme, chopped
- 1 tbsp sage, chopped
- 1 tbsp rosemary, chopped
- 1 tbsp parsley, chopped
- 1 tbsp cilantro, chopped
- 1 tbsp chives, chopped
Prep:
- Combine all above ingredients.
- Scoop herb butter into a container with sealed lid, preferably glass.
- Let set in fridge for at least 1 hour to firm.
- Enjoy on warm bread, add to sauces, mashed potatoes, roasted veggies, fish, etc.!

Many times, the well known brand 'health conscious' brick and mortars add astronomical amounts of sugar to their delicious smoothies defeating, instead of assisting, in healthFUL living. Now, the sugars aren't necessarily added sugars like additional honey, agave, or table sugar. These sugars reside in the syrups and juices that these fruits are packaged in. And for the nuttier smoothie menu options, they tend to be sweetened with more than 6 grams per serving of sugar- exceeding the standard serving size portion of natural nut butters found on the the shelves of your local grocer!
Long story short, the average calorie contents of a basic store-bought smoothie is upwards of 400+ calories with the sugar content easily exceeding 10-20 teaspoons! You might as well have cupcakes!
First, don't eat the cupcakes, lol!
Secondly, make it a point to invest in your health by investing in a quality blender and create your own healthy smoothies at home. Follow my Healthful Smoothie Tips tips below that will ensure you have a delicious and TRULY healthy smoothie, and not just a dessert with fruit!
HEALTHFUL SMOOTHIE TIPS

Don't get me wrong, this leafy vegetable remains a cornerstone dish in my kitchen and I'm certain many other kitchens alike. However, once you know better you absolutely have no choice but to do better. So after tossing the ham hocks (nope, not even a smoked turkey wing!), I imagined a healthier and just as tasty version of this essential green. The creation of my Quick Sautéed Collards w/ Garlic & Sherry helped me maintain the best of both worlds.
This delicious health-full plant is prepared in such a way that the vitamins, minerals, and valuable nutrients stay locked in- hence the 'quick' in the recipe title, lol! Unlike back in the day where that pot of greens would stay boiling on the stove ALL DAY long!
*History Taste Bud*: Pot Liquor, as it's often referred, is essentially these liquid/juices from the greens that cooked all day on that very stove in most African American homes. This pot liquor was oftentimes consumed separately as an additional supplement and also given to babies for nourishment because of its rich nutrient content.*
And the texture! The sherry adds a tasty component that helps in breaking down the leaves with added flavor that matches a days worth of cooking. These greens are amazingly tender, delicious, and so filling that you'll want to make more! And that's a good thing health wise as well as time wise- I mean really, the whole dish is ready from prep to plate in less than 15 minutes! So as the self-appointed Culinary Health Consultant of Savannah State University Tiger Alumni (lol!), I have devised 3 Get-back-right 'Post-Homecoming Detox' recipes for the week after to recoup and re-align from the past weekend 'activities'.
Ultimately, this is simply an awesome way to jump-start to a healthier body and lifestyle, inside and out!
Enjoy the recipes below along with these helpful tips below:
1. No fried food for the next 3 days.
2. No artificial or added sweets for the next 3 days.
3. No alcohol for the next 3 days.
4. Drink 8oz. of warm lemon water every morning.
5. Drink at least 1/2 your body weight in water everyday.
**POST-HOMECOMING 'Tiger' DETOX**
THE WATER:
- Gallon of water
- 1/2 sliced cucumber
- 1 inch peeled ginger root
- 1 lemon sliced
- handful of fresh mint leaves.
THE SMOOTHIE:
- 2 stalks of celery
- 1 apple
- juice of 1 lemon
- 1 inch turmeric root
- 1 cup spinach
- Blend until smooth.
THE BROTH:
- Container of low-sodium vegetable broth
- 4 green onions chopped/sliced
- 4 cloves of minced garlic
- 1 cup sliced mushrooms
- the juice of 2 limes.

Well, it depends ultimately on what you're looking for. Salads are light and refreshing meals that don't make you feel guilty...right? Well you may be surprised to find the calorie counts to be high and health ratings low in some of your favorite salads. This is largely due to the high-fat content in the dressings that make them taste sooooo good! For the amount of dressing added to these 'healthy' salads from our favorite restaurants, calories can skyrocket upwards of 300 calories alone! Not only that, but add the cheese, nuts, dried fruits, meats protein, boiled egg, croutons, etc., and your healthy-option-salad is running neck-and-neck with, if not exceeding the calorie count of your average cheese burger combo meal.
No fear, AC Art Of Food is here! My Black Bean & Greens Salad is a super healthy flavorful one that includes a modest selection of ingredients that are flavor-packed and nutrient rich. Simplicity speaks volumes!!
RULES OF THUMB:
- Less is best- choose your favorite 3 ingredients, no more than 4 and add to your salad greens.
- Oil & vinegar, or my favorite, lemon & oil are super delicious with a pinch of sea salt, garlic powder, and fresh cracked pepper- don't knock it 'till you try it, you'll be surprised!
- Want more of a creamy taste- make avocado one of your toppings with the dressing option above.
- WRAPS: Size is everything! Smaller wraps tend to run between 75-120 calories, much lower than their larger counterparts and are just as filling! Portion control is key- EVERYTHING in moderation.
