I can name several people who influenced the brand AC Art Of Food through cooking, tasting, and conversations about a great meal. However, only a select few really inspired me to take hold of the health aspect of culinary- never letting go! One of those individuals is Dr. Rovenia M. Brock, or fondly known to most as Dr. Ro. I remember first laying eyes on Dr. Ro in the late 80s as one of the hosts of BET's Heart & Soul. For some reason I was hooked on the show and all the intriguing info of good health that was delivered. Fellow co-host Mocha Lee was the super-fit workout contributor, but Dr. Ro focused on the nutrition fitness, piquing my interest with every common sense health remedy and scientific nutritional fact she would relay- I.WAS.HOOKED! Not realizing that some 30+ years later she would still be impacting not only my personal health, but my business path as well. Dr. Ro is an amazing and knowledgeable nutritionist, author, coach, journalist, motivator, and seemingly all around cool individual. Her passion is real like mine. We've both endured the loss of a loved one due to illness and disease that very well could have possibly been prevented had proper diet and nutrition been incorporated, ultimately dispelling generational health 'curses'. Is there any more perfect season for soup than Fall? The answer is easily a 'no'! Tis' the season for falling leaves, cooler temps, and warmer foods of comfort- namely soup! And to make it that much better (as if it could get any better!), I made it vegan! Perfectly Abstract Spice seasoned white bean soup, sweet grilled onions, finished with delicious vegan Italian sausage with a kick of spice! Hey, but don't take my word for it, try this easy comfort-food recipe for yourself! Abstract Vegan White Bean & Sausage Soup Soup: 2 cups or 2- 16oz. cans(rinsed) of prepared Great Northern beans 1 tbsp Olive Oil 2 tbsp Abstract Spice (Original, Lower Sodium, or Spicy) 2.5 cups Water Sausage Saute': 2 tbsp Olive Oil 2 cups Vegan Italian Sausage, sliced 1/2 Onion, sliced 1 tbsp Abstract Spice The Process: In a pot, add and mix together all soup ingredients on med/high heat until boiling. Once boiling, cover and lower temp to simmer (low/med) for 20 minutes. - In a skillet/pan, heat 1 tbsp oil and add onions on med/high heat. Saute onions until browned and translucent- remove from pan. Add 1 tbsp of oil to the same pan tossing in sausage and 1 tbsp Abstract Spice sauteeing on med/high heat until browned and crisp. - In a bowl, layer soup, onions, top with sausage, and enjoy! Pairs well with a crusty piece of french bread and a glass of white wine! trying this recipe?
