Now I usually save recipe posts like this for the colder seasons, but my family insisted on me preparing this dish for Sunday dinner. The good thing about this recipe is that you don’t have to turn on the stove! The slow cooker does it all… in a corner, on the counter, with no heat exerting from the stove in the hot summertime! I threw 8 of these legs in my large slow cooker at 9am and went about my day. I jotted down a few more recipes (to be posted soon), brain stormed on some new ideas for the company, went to pick up my daughter from a slumber party at a friend’s home- along with breakfast and great conversation, ordered school supplies online to avoid the back-to-school rush, gave myself a mani/pedi, folded clothes with my hubby, and watched ‘Inglorious Bastards’ for the 5th time (AWESOME movie). Oh, and of course completed the Sunday dinner side dishes consisting of my Red Wine Black-eyed Peas & Green Lentils, sautéed spinach, Yellow Turmeric Rice, and a good ol’ pan of black skillet corn bread. Aaaaaaahhhh, yes, yesterday was a good day! So much so that I’m sharing with you the fall-off-the-bone tender and delicious comforting recipe below.
