FoodFindFriday- Icecream Brownie Cupcakes w/ Ganache from GFGF…

Two things I love? Hmmm… Chocolate & Twitter.

So it was no surprise  that when I saw this recipe from one of the delicious profiles I follow on Twitter (Good Food Good Friends) for ‘Icecream Brownie Cupcakes with Ganache’…I almost lost it!!   It’s like a foodies sweet tooth dream come true!  Such a seemingly perfect combo of creamy smooth chocolate, mocha, and cool ice cream, OMG, heaven!! 

After salivating through the recipe I noticed that to create these masterpieces would be rather inexpensive, which is a huge plus!  I would also assume one would need to follow the precise instructions carefully though they’re short and laid out to a ‘T’. 

Personally I’m planning on contributing these to the family for Easter.  But don’t wait on me- try these today!

Icecream Brownie Cupcakes with Ganache


This dessert couldn’t be easier to make and is sure to be loved by kids and adults alike.

Ingredients

1 box brownie mix

chocolate icecream

8 oz. semi sweet chocolate chips

1/2 cup heavy cream

1 tsp instant coffee

Directions

Prepare brownie mix as directed.  Line a 12 dozen cupcake pan with papers.  Fill each cupcake evenly.  Bake as directed.  If your box doesn’t have cooking times for cupcakes, reduce the cooking time by 10-15 minutes and just watch them.  Remove from oven.  While still warm, use the back of a wood spoon to create a well in each cupcake.  This will hold your ice cream.  Remove ice cream from freezer and let soften while your cupcakes cool.  Once they are cool, fill each well with ice cream.  Place into freezer to re-freeze the ice cream (about 1 hour).

Ganache

Melt chocolate chips, heavy cream and instant coffee in a double boiler just untill smooth.  Remove from heat.  Dip the top of each cupcake into the ganache.  Place back into the freezer until ready to serve.
